Silky Butternut Squash & Ginger Soup

Warmly spiced with fresh ginger and a hint of coconut milk, this vibrant orange soup is as beautiful as it is healing.

Ingredients

  • 1 medium butternut squash (about 900g), peeled and cubed
  • 1 onion, chopped
  • 3cm piece fresh ginger, grated
  • 2 garlic cloves
  • 800ml vegetable stock
  • 200ml coconut milk
  • 2 tbsp olive oil
  • Salt, pinch of cayenne

Method

    Sauté onion in olive oil until soft. Add garlic and ginger, cook 2 minutes.

    Add squash and stock. Simmer 25 minutes until squash is completely tender.

    Blend until perfectly smooth. Stir in coconut milk.

    Season with salt and a tiny pinch of cayenne. Serve warm.

What you can eat now

During days 1-3 your mouth needs complete rest. Stick to room-temperature or cool liquids, smooth soups, broths, fruit juices with no pulp, and dairy smoothies. Nothing that requires any chewing at all.
