White Bean & Rosemary Cream

A Tuscan staple elevated to cream-soup form: cannellini beans blended with rosemary-infused olive oil into something extraordinary.
Ingredients
- 2 × 400g cans cannellini beans, drained
- 1 sprig fresh rosemary
- 3 garlic cloves
- 800ml light vegetable stock
- 4 tbsp excellent olive oil
- Zest of ½ lemon
- Salt, white pepper
Method
- 1
Warm olive oil with rosemary sprig and garlic in a saucepan over low heat for 5 minutes to infuse. Remove rosemary.

Add beans and stock. Simmer 15 minutes.

Blend until completely smooth. Add lemon zest.

Season generously. If too thick, thin with warm water.

Serve with a final drizzle of the best olive oil you have.

What you can eat now
During days 1-3 your mouth needs complete rest. Stick to room-temperature or cool liquids, smooth soups, broths, fruit juices with no pulp, and dairy smoothies. Nothing that requires any chewing at all.
