Bistecca alla Fiorentina

A T-bone or Porterhouse of Chianina beef, grilled over high heat and served still pink. Florence's great contribution to carnivore joy.
Ingredients
- 1 Florentine T-bone steak (at least 600g, 4–5cm thick)
- Extra-virgin olive oil
- Rosemary sprig
- Coarse sea salt
- Freshly cracked black pepper
- Lemon wedge to serve
Method

Bring steak to room temperature 1 hour before cooking.

Heat a grill or cast-iron pan to its absolute maximum.

Grill steak 5–6 minutes each side without moving. For the authentic bistecca, serve rare to medium-rare.

Rest on a board 5 minutes. Season generously with coarse salt and pepper.

Drizzle with olive oil and serve with lemon. Never, ever sauces.

From month two, most patients can return to a normal diet. This phase is about celebrating your new smile, enjoy the foods you love, just continue to be mindful and follow your dentist's specific guidance.
