Mici cu Muștar – Romanian Grilled Sausages

Romania's iconic street food – skinless minced meat sausages grilled over charcoal, served with mustard. Mici without mustard is heresy.

Ingredients

  • 400g beef mince
  • 300g pork mince
  • 1 tsp bicarbonate of soda
  • 1 garlic clove, grated
  • 1 tsp sweet paprika
  • ½ tsp cumin
  • ½ tsp coriander
  • Salt, black pepper
  • Romanian mustard to serve

Method

  1. 1

    Combine all ingredients in a bowl. Knead vigorously for 5 minutes – the texture is crucial.

    Rest mixture refrigerated at least 2 hours (overnight is better).

  3. 3

    Shape into cylinders about 8cm long with wet hands.

  4. 4

    Grill over high heat 3–4 minutes each side until charred and cooked through.

  5. 5

    Serve immediately with yellow mustard and fresh bread.

From month two, most patients can return to a normal diet. This phase is about celebrating your new smile, enjoy the foods you love, just continue to be mindful and follow your dentist's specific guidance.
