Osso Buco alla Milanese

Veal shin braised until the collagen melts into a golden sauce. The marrow inside the bone is Phase 3's greatest reward.

Ingredients

  • 2 veal shin cross-cuts (osso buco), 4cm thick
  • 1 onion, 2 carrots, 2 celery sticks – diced
  • 200ml dry white wine
  • 400g crushed tomatoes
  • 500ml veal or chicken stock
  • Gremolata: zest of 1 lemon, 1 garlic clove (grated), 3 tbsp parsley
  • Flour for dusting, olive oil, salt, pepper

Method

  1. 1

    Dust veal in flour. Brown on both sides in olive oil in a large casserole. Set aside.

  2. 2

    Soften onion, carrot, celery 8 minutes in the same pot.

  3. 3

    Add wine, reduce by half. Add tomatoes and stock.

  4. 4

    Return veal, cover, and braise at 160°C for 2 hours until completely tender.

  5. 5

    Mix gremolata ingredients. Serve osso buco with saffron risotto, topped with gremolata.

What you can eat now

By week two you can begin rebuilding your diet more normally. Introduce tender proteins, soft pasta and rice, and cooked vegetables. Still avoid anything crunchy, chewy, or sticky.
