Uova in Purgatorio – Eggs in Tomato

Eggs poached directly in a spiced tomato sauce – simple, nourishing, ready in 20 minutes. A Southern Italian classic.
Ingredients
- 400g crushed tomatoes
- 2 garlic cloves, sliced
- ½ tsp chilli flakes (omit if sensitive)
- 4 eggs
- 3 tbsp olive oil
- Fresh basil
- Salt
Method
- 1
Heat olive oil in a wide pan. Add garlic and chilli, cook 1 minute.

Add tomatoes. Season with salt and simmer 10 minutes until thickened.

Make 4 wells in the sauce. Crack an egg into each well.

Cover and cook 4–5 minutes until whites are just set, yolks still soft.

Finish with torn basil. Serve immediately, directly from the pan.
Phase 2: Days 4–10 (Soft solids)
What you can eat now
From day 4 onwards you can introduce very soft solids, think scrambled eggs, yoghurt, soft-cooked fish, and well-mashed vegetables. Avoid anything with hard edges, seeds, or that requires biting.
